Overripe cherries are carefully handpicked and laid out on raised beds to dry under the tropical sun, allowing the sugars to concentrate and create a deeply fruity cup with beautiful complexity.

This lot comes from the Kintamani region of Bali, where smallholder farmers grow coffee on the fertile slopes of an active volcano. The cool climate, rich soil, and abundant natural resources create the perfect conditions for slow cherry maturation and exceptional flavor development.
Grown by members of Subak Abian (SA) cooperative, these farmers follow a philosophy called "Tri Hita Karana"—a way of life that emphasizes harmony between people, nature, and the divine. They farm organically without the use of synthetic pesticides or fertilizers, and have been certified organic since 2008.
Only the ripest cherries are selected and naturally sun-dried on raised beds for up to three weeks, allowing the fruit's natural sugars to infuse the beans. This traditional process results in a fruit-forward cup with depth, clarity, and a silky body.
